Corn Bread - (Moosewood Cookbook, Mollie Katzen)
Ingredients

Preheat oven to 425 degrees
cup honey (Phipps)
1 cup buttermilk (Pescadero Country store) or you can use 1 cup milk with 1 tbs. lemon juice
1 egg
1 cup yellow corn meal (Phipps)
1 cup unbleached white flour
3 Tbs. melted butter
2 tsp. baking powder
tsp baking soda
tsp salt

Cooking Instructions

Beat together egg, milk and honey, set aside. In large bowl, stir together dry ingredients. Add egg mixture and melted butter to flour and mix well. Pour into greased 8-inch square baking pan. Bake 20 minutes. Serve hot with butter.
